上海龙厨食品有限公司隶属国福集团,集团斥资1000万美元,选址闵行区都会路,建立了一整套先进的后勤保障,仓储管理和配送体系,不仅满足了客户对食品供应的高质量需求、更强化了对食品多元化发展的期望。
公司占地总面积60亩,其中,厂房面积4000 m2,冷库面积5000 m2,分装车间4000 m2,配套办公面积3800 m2及11个大型卸装平台。此外,在市内还设有2个中央厨房,服务客户遍及工商企业、商务楼、政府机关及学校。公司现有员工1200人,其中厨师占20%,专业管理人员占5%,日服务量已超过10万人次。

(一):PDC半成品加工:PDC半成品加工包括食材采购,加工和运输的各个方面,一体化地流程操作,保证了食物的新鲜,也简化了食物加工的工序。
(二):团体膳食承包:团体膳食承包是龙厨食品为方便企业客户,提供的一项上门服务。我们为客服修建餐厅食堂,量身提供其所需的餐饮服务。

对所生产的食品,每种取样100-250克,低温存放48小时,以确保食品的安全具有可追溯性。for every batch of meal, take 100-250g for sampling. refrigerated for 48 hours to make sure the traceability for food safety.

环境卫生就餐区于用餐完毕2小时内清洁消毒,包括周边环境;能源节省,非用餐的时段;canteen surrounding hygiene, canteen must be cleaned and sanitized 2 hours after meal, including surrounding. Save energy during mom-meal hours.
就餐区照明及空调在就餐区清洁,完毕后全部关闭,待至开餐前15分钟再行打开;lighting and air condition shall be clean regularly, shut down after meal service and turn on 15 minutes before meal service.
龙厨每日的废弃物都定点由具备相应资质的专业公司委派专人负责处理;leftover is regularly disposed by certified company with professional personnel.
炊具在热力消毒后以专区专柜存放。cooking utensil shall be disinfect by heat and store in sealed container.

紧急预案:突发性停水/停电/停气等不可抗力因素
龙厨配有严格的紧急应急程序和措施,将紧急状态恢复为控制状态,并将对人和环境的影响减到小。程序将在紧急状态下执行,包括:氨泄漏应急、化学品泄漏应急、水火灾应急等。
规范和合理的措施将保障客户的人员和货品安全;
成立了专职的安全管理部,以及公司级别的安全管理委员会;
建立了建筑、氨系统、制冷设备、各类叉车等设备的维修和检测档案;
定期举行各类安全会议、培训、演习和考试等;
对安全设施如:密封门、安全出口、逃生路线等进行定期检查;
冷库配备两条专用电路及应急供电系统。
Emergency Control and Measure: such as no water supply, power shortage and force majeure
Long Chu has strict emergency control and measure, to restore emergency to control condition and ensure minimum damage to human life and environment. Measures will deal with emergency such as: ammonia leak, chemical spill, flood and fire.
Specific and rational control will ensure the safety for both people and product.
Establish professional safety management Department and supervise by headquarter safety management committee.
File maintenance and test record for building, ammonia system, refrigeration equipment, forklift and other equipments.
Periodically stage various safety meeting, training, drill and test.
Periodically check safety facility and equipment such as: seal door, safety exit, and emergency escape route.
Cold storage has two individual power supplies and equip with emergency power supply.
